Grilled Chicken Scallops with Lemon Sauce 🍋🐔

These tender chicken scallops are perfectly browned and coated in a tangy, slightly sweet lemon sauce for a bright and flavorful meal.

Ingredients:

– 4 chicken scallops (thinly pounded chicken breasts)
– 3 tbsp olive oil, divided
– 2 cloves garlic, minced
– Juice of 2 lemons
– Zest of 1 lemon
– 1 tbsp Dijon mustard
– 1 tbsp honey
– Salt and pepper, to taste
– 1 tbsp fresh parsley, chopped (for garnish)

Instructions:

1. Cook the Chicken:
– Heat a skillet over medium heat and add 2 tablespoons of olive oil.
– Season the chicken scallops with salt and pepper, then brown in the skillet for 4-5 minutes on each side until fully cooked. Remove the chicken from the skillet and set aside.
2. Prepare the Lemon Sauce:
– In a small bowl, whisk together the lemon juice, lemon zest, minced garlic, Dijon mustard, honey, and the remaining tablespoon of olive oil.
3. Simmer the Sauce:
– Pour the lemon sauce into the skillet and let it simmer for about 2 minutes, stirring regularly to allow flavors to blend.
4. Coat the Chicken:
– Return the chicken scallops to the skillet, spooning the sauce over them. Cook for an additional minute to warm through and coat the chicken evenly.
5. Serve:
– Plate the chicken and garnish with freshly chopped parsley. Serve hot with extra sauce
