Ingredients
Main Ingredients:
– Chicken: 200 grams (7 oz), diced
– Cooked rice: 4 cups (or 2 servings, day-old works best)
– Garlic: 2 cloves, minced
– Onion: 1, finely chopped
– Spring onions: 2β3, chopped
– Mixed vegetables: 2 cups (200 g), fresh or frozen, diced (e.g., carrots, peas, corn, etc.)
– Egg: 2, lightly beaten
– Cooking oil: 2 tbsp (sunflower, peanut, or vegetable oil)
– Sesame oil: 2 tsp
– Salt: To taste
For Stir-Fry Sauce:
– Regular soy sauce: 2 tbsp
– Dark soy sauce: 2 tsp
– Oyster sauce: 2β3 tbsp
– White pepper: 1/2 tsp
– Sugar: 1 tbsp
–Instructions
1. Prepare the Stir-Fry Sauce
In a small bowl, mix together:
– Regular soy sauce
– Dark soy sauce
– Oyster sauce
– White pepper
– Sugar
Set the sauce aside for later.
2. Cook the Chicken
1. Heat 1 tbsp of cooking oil in a large wok or skillet over medium-high heat.
2. Add the diced chicken and cook until golden and fully cooked through (about 4β5 minutes).
3. Remove the chicken from the pan and set aside.
3. Scramble the Eggs
