Ingredients:
– 2 lobster tails
– 3 tbsp butter, divided
– 1 small onion, chopped
– 1 celery stalk, chopped
– 1 medium carrot, chopped
– 3 cloves garlic, minced
– 2 tbsp tomato paste
– 1/4 cup all-purpose flour
– 1/4 cup dry white wine (optional)
– 3 cups seafood stock (or chicken stock)
– 1 cup heavy cream
– 1/2 tsp paprika
– Salt and pepper, to taste
– Fresh parsley, chopped, for garnish
Instructions:
1. Cook the Lobster:
– Bring a pot of water to a boil and add the lobster tails. Boil for 5-7 minutes until the shells turn bright red and the meat is opaque.
– Remove the lobster tails, set them aside to cool slightly, then remove the meat from the shells and chop into small pieces. Set the meat aside for later.
– Reserve the shells for extra flavor in the bisque.
2. Make the Bisque Base:
– In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion, celery, and carrot. Sauté until softened, about 5 minutes.
– Add the garlic and cook for an additional 1 minute, then add the reserved lobster shells for added flavor.
– Stir in the tomato paste and cook for 2 minutes, stirring to combine.
3. Add Flour and Stock:
– Sprinkle the flour over the vegetable mixture and stir well to coat. Cook for 1-2 minutes.
– Pour in the white wine (if using) and cook until mostly evaporated, about 2 minutes.
– Gradually add the seafood stock, stirring constantly to avoid lumps. Add the paprika and simmer for 20 minutes to let the flavors meld, stirring occasionally.
4. Blend the Soup:
– Remove the lobster shells from the pot. Use an immersion blender to puree the soup until smooth (or blend in batches in a regular blender).
– Stir in the heavy cream and season with salt and pepper. Let the bisque simmer on low for another 5 minutes.
5. Add the Lobster Meat:
– Add the chopped lobster meat to the bisque, and cook until warmed through, about 2-3 minutes.
6. Serve:
– Ladle the lobster bisque into bowls, garnish with fresh parsley, and a drizzle of melted butter if desired.
